Ingredients
Green Chile Chimichurri Chongas
- 8 count 10” tortilla
- 2 cups cooked, shredded chicken
- 1 cup shredded, yellow cheddar
- 1 cup green Chile diced
- ½ cup corn
- ½ cup diced, roasted red peppers
- ½ cup shredded, pepper jack
- 1 tsp salt
- 1 tsp pepper
- 2 tsp cumin
- Green Chile chimichurri for dipping (see recipe)
- 2 cups green Chile, drained
- 1 cup packed cilantro
- ½ cup roasted garlic
- ½ cup roasted onions
- 1 bunch green onions
- 1 tsp salt
- 1 tsp pepper
- ¼ cup lime juice
- 1 cup oil

Green Chile Chimichurri Chongas
- In a mixing bowl, combine all ingredients (except tortilla).
- Add ¾ cup mixture to center of tortilla. Roll tight burrito. Use toothpicks to hold it together for frying.
- Fry at 375° for 3-5 minutes.
Green Chile Chimichurri Sauce: (for dipping)
- In food processor, combine all ingredients (excluding oil).
- Process until well blended.
- Slowly drizzle oil ½ cup to full cup to desired consistency.
